After graduating from the California Culinary Academy in San Francisco, Chef Tracey Shepos Cenami worked her way up to lead cook at some of the country's leading restaurants before running her own catering business and opening four restaurants as Executive Chef. Cenami credits her mom and her Italian grandmother for her success, who introduced her to uncommon culinary experiences at an early age. Grounded by her family roots, Cenami combines local ingredients that are both new and unusual with classic cooking techniques to create updated comfort foods. Today Cenami is head of the Wine & Cheese pairing program at Kendall-Jackson Wine Estates and particularly enjoys cooking with cheese. Here she takes two culinary classics to new heights with a unique Cheddar-Blue Fondue and Macaroni and Cheese with Ham Hocks and Cornbread Crumbs.
