A new era of Wisconsin cheddar has emerged in the past decade with more cheesemakers moving to artisan aged and bandaged cheddars. On Tuesday, December 9, come to the Firefly Coffeehouse in Oregon at 7:00 p.m. and taste three aged cheddars from one to 15 years, as well as a reserve bandaged cheddar. Class is limited to 22 attendees and includes a glass of wine, beer or beverage.
