Needless to say, sour beer is crafted with a tart, acidic, or sour taste. Varieties range in flavor from slightly tart to extremely sour. Often called "wild ales," these beers can be difficult to produce and typically require adding bacteria to the ale yeast. To achieve the desired flavor, sour ales are usually barrel-aged for at least a month. The tart flavor is an innate fit for creamy entrées and cheeses, as well as rich and flavorful foods.
