Aged cheddar has a texture both crumbly and creamy with a flavor often described as beefy. Usually golden but also be white, it shreds and melts well. With age, cheddar's rich, nutty flavor becomes increasingly sharp, while its smooth, firm texture becomes more granular and crumbly. Profoundly aromatic and complex, cheddar can be aged for up to fifteen years.
