Cooking Instructions

For secret sauce:

Combine all ingredients and whisk until smooth. Refrigerate until ready to use.


For messy mix:

Combine mayonnaise, d'Espelette powder, and cotija; mix well.


For burgers:

Make four 6-ounce patties with the beef. Season with salt and pepper. Heat oil in a skillet over medium high heat. Fry burgers until browned on one side , then flip and top each with warm caramelized onions and two slices of asadero cheese. Cook to desired doneness and until cheese is melted.


For assembly:

Place some pickles and iceberg lettuce on each bun bottom. Place a burger on each. Spread secret sauce over cheese and cover with bun top. Spoon messy sauce over the completed burgers. Serve immediately.


*Smoked Spanish paprika may be substituted


**Wisconsin feta cheese may be substituted.
