Combine lobster and sherry in small bowl; set aside.

Melt butter in medium saucepan over low heat. Add onion and sauté until translucent. Blend in flour; cooking until smooth and bubbly, stirring constantly. Gradually stir in milk. Continue cooking and stirring until mixture thickens. Season with tarragon, salt and pepper.

Stir in lobster and sherry; cover and simmer 5 minutes. Stir in cheese and until well blended. Do not boil. Ladle into cappuccino cups and top with milk froth and bacon crumbles, and an additional sprig of tarragon, if desired.


*Or, substitute Wisconsin alpine-style cheese.
