BBQ Duck Confit Nachos with Cheddar Queso

Make confit: Heat oven to 275°F. Scoop duck fat into saucepan and warm until melted. Place duck legs in deep casserole dish. Season with salt and peppercorns. Layer onion, thyme, bay leaves and parsley over duck. Carefully pour melted duck fat over so duck is completely covered with fat. Cover dish or pot and bake 6 hours. When cool, shred duck.

Make queso: Melt butter in small saucepan. Whisk in flour until smooth. Add chicken stock and bring to boil. Slowly whisk in cheddar until smooth and melted. Add jalapeño, tomato, Sriracha sauce and bell pepper.

To finish: Mix shredded duck with barbecue sauce (add additional to moisten, if necessary). Warm in sauté pan over low heat. Arrange 4 nacho chips on each of 8 serving place. Top each with about 1 1/2 tablespoon duck and 1 tablespoon queso. Garnish with sour cream, scallions and cilantro.
