Burgers Stuffed with Bacon and Blue Cheese

Heat oven to 425°.

Remove papery outside from garlic (keeping cloves together). Cut off the top third of garlic bulb; brush with olive oil. Wrap in heavy-duty aluminum foil. Bake for 28-35 minutes or until garlic is tender. Cool for 15 minutes; squeeze garlic into a small bowl. Mash with fork to make a paste. Set aside 2 tablespoons. Save any remaining garlic for a different recipe.

Meanwhile, sauté onions in butter in a large skillet over medium heat until tender. Reduce heat to medium-low. Cook sautéed onions for 20-25 minutes or until golden brown, stirring occasionally and adding butter as necessary. Season with salt and pepper to taste. Remove onions from pan when desired color is reached. Set aside and keep warm.

Fry bacon in a large skillet until crisp. Remove bacon to a paper towel to drain. When cool enough to handle; crumble bacon. Set aside.

Mix mayonnaise with reserved 1 tablespoon roasted garlic. Cover and refrigerate until serving.

Heat grill. Crumble beef over remaining 1 tablespoon roasted garlic a large bowl; mix well. Form into 8 thin patties. Press blue cheese into 4 small patties. Place cheese in the center of four beef patties. Sprinkle with reserved bacon. Top with remaining beef patties; press meat edges to seal.

Grill burgers, covered, over medium for 5-8 minutes on each side or until a thermometer reads 160°F. Top with colby. Cover and cook 1-3 minutes longer or until cheese is melted.

Spread buns with reserved mayonnaise mixture; top with lettuce, burgers, reserved onions and barbecue sauce.

Any brand of Wisconsin colby or blue cheese can be used.
