Burgers Stuffed with Bacon and Blue Cheese

This savory 2-cheese burger makes the most of roasted garlic that flavors both the beef and mayonnaise.

Melt butter until foaming in large frying pan over medium-low heat. Add onions and cook, stirring occasionally, until deep golden brown and caramelized, about 45 minutes. Season well with salt and pepper, remove from pan, and set aside.

Mix mayonnaise with 1 tablespoon roasted garlic; salt and pepper to taste. Refrigerate until ready to use.

Preheat grill. Combine ground beef, remaining tablespoon roasted garlic, bacon, salt and pepper in medium-large bowl. Divide into 8 patties. Separately, form crumbled blue cheese into 4 equal patties. Place 1 cheese patty on each of 4 beef patties. Top with remaining 4 beef patties; pinch edges to seal completely. Set aside.

Grill burgers about 4 minutes on first side; Flip and grill additional 3 minutes, or until burger is cooked to your liking, placing Colby slice on burgers during final minute of grilling and covering grill to facilitate melting.

Meanwhile, spread reserved garlic mayonnaise on bottom of each bun. Top with lettuce and stuffed beef patty. Place 2 tablespoons caramelized onions over each burger; top with barbeque sauce and remaining bun half.


*To roast garlic, preheat oven to 400°F.Cut off top third of 1 head of garlic with knife. Place garlic in small oven-safe baking dish. Drizzle with olive oil. Add 1-2 tablespoons water to bottom of baking dish. Cover dish tightly with foil, and bake about 45 minutes. Squeeze garlic cloves from head to remove skins before using. Roasted garlic will keep, refrigerated in airtight container, for up to 2 weeks.
