Cheddar Almond Cream Pie with Cranberry Almond Streusel

Heat oven to 350°F. On lightly floured surface, roll out dough and fit into 9-inch pie pan, forming high fluted edge.


For cream filling:

In food processor, process almonds until finely ground. Add cheese to almonds and pulse until just blended. Mixture will resemble coarse sand.

In bowl of electric mixer, combine sugar and butter until smooth and satiny. Mix in ground almond and cheddar mixture, eggs, cornstarch, vanilla and flour; process until well blended, about 15 seconds.

Pour mixture into pie pan and spread evenly. Set aside.


For streusel:

mix cranberries, almonds and brown sugar in medium bowl. Distribute mixture over pie, pressing mixture lightly into almond cream.

Bake 50-60 minutes or until filling puffs slightly in center. Cover lightly with foil if cranberries start to get too brown.
