Heat oven to 350°F. Slice baguette into 1/2-inch slices (should yield 25 to 30 slices). Brush top of each slice with olive oil, and bake in the heated oven until crisp, 10-15 minutes.

Top each piece of toasted bread with peach preserves. Top with 1 tablespoon shredded chicken, then 1 small piece of prosciutto, and 1 tablespoon cheese.

Turn on the broiler. Place bruschetta under broiler until cheese is melted, just a few minutes. Serve warm or at room temperature.
