Fava Bean and Edamame Spread with Juustoleipa

Bring medium pot of salted water to boil. Remove fava beans from long green pods by sliding your finger along pod’s seam and popping out beans. Discard pods and drop fava beans into boiling water. After 3 minutes, taste-test large fava bean. If it tastes sweet and buttery and has no raw notes, remove beans from pot and drain. If bean tastes slightly raw, boil another minute and recheck. Drain cooked beans and shell by using your fingernail to pierce bean’s thin white skin. Squeeze interior bright green bean from skin. Continue until all are shelled, discarding skins.

In work bowl of food processor, combine edamame, shelled fava beans, mint, lemon zest and juice, yogurt, water, olive oil, salt and pepper. Blend until smooth. Spoon into small bowl for serving.

Cut juustoleipa into six pieces lengthwise. Heat sauté pan to medium-high. Place cheese in pan and sear 3 minutes on 1 side. Flip to other side and repeat. Quickly turn cheese on slimmer edges for about 1 minute each to warm. Serve cheese with fava bean and edamame dip and sliced radishes.
