Southwestern Cheese, Sausage and Cornbread Strata

Heat oven to 350°F. Lightly oil half hotel pan (about 12"x10") or 12 Texas muffin tins or personal pans. In large skillet; heat 1 tablespoon oil over medium-high heat. Add sausage and onion; sauté about 5-7 minutes or until sausage is cooked through and onion is tender and opaque. Remove pan from heat and stir in corn, salsa and cornbread. Spread half of mixture into prepared pan(s).

Cover mixture with 1 1/2 cups cheese; top with remaining cornbread mixture. In large bowl; whisk eggs, milk, salt, garlic powder and pepper. Pour over cornbread mixture. Lightly push down on mixture, allowing cornbread to absorb some liquid. Bake about 50 minutes (fewer for individual pans or muffin tins). Remove from oven and sprinkle jalapeño and remaining cheese over strata. Return to oven and continue baking 10 minutes, until cheese melts and strata is lightly browned, puffed and a knife inserted in center comes out clean. Serve warm.
