White Feta Pizza

The same great combination of spinach and feta in the classic Greek spanakopita (spinach pie) makes this pizza irresistible.

Cooking Instructions

For pesto:

Place all pesto ingredients except olive oil in bowl of food processor. Process, pulsing, and drizzling olive oil into processor bowl until pesto emulsifies. Reserve. (Makes 1 1/2 cups.)


For pizza:

Heat oven to 500°F. Brush crust with olive oil. Blend ricotta and 1/4 cup reserved spinach garlic pesto until well combined. Spread mixture evenly over crust. Evenly distribute grilled zucchini, spinach leaves and onions over ricotta mixture. Sprinkle feta over and top with a few grinds of black pepper. Bake until crust is crisp and toppings are heated through, about 10 minutes.

Spoon additional pesto over top before serving, if desired.
