Heat oven to 425°F. Drain any residual liquid from roasted vegetables. Season with crushed red pepper, Italian seasoning, salt and pepper; adjust to taste. Set aside.

Roll or pat dough to fit into 12-inch circular, 1 1/2 to 2 inches deep pizza or cake pan, allowing about 1/2 inch dough for overhang to form rim. Press dough into sides of pan, leaving rim dough to rest over sides of pan. Brush dough with olive oil. Top with half of following ingredients in this order: pizza sauce, reserved vegetables and cheese. Repeat layers, ending with cheese.

Fold 1/4 inch overhang under remaining overhang and press together to form rim. Crimp, if desired. Bake pizza 15-20 minutes or until crust is lightly browned and center is bubbly.
