Beet Lemonade and Burrata

Look for beet juice at natural food stores. If using a juicer at home, 2-3 beets will yield 3/4 cup juice.

For syrup:

In saucepan, heat sugar and 1 1/4 cups water over medium heat, stirring frequently, until sugar has dissolved. Cool to room temperature.

In a pitcher, combine simple syrup, lemon juice, beet juice and 1/2 water. Stir to combine. Add additional water to taste. Serve over ice. Garnish with basil leaves, if desired. Serve with burrata.
