Let dough come to room temperature, covered, for 30 minutes. Heat oven to 500°F.

In small saucepan, combine peanut butter, hoisin, honey, rice wine vinegar, ginger, garlic, sesame oil, soy sauce and Sriracha sauce. Cook over low heat until peanut butter melts and mixture is smooth, stirring occasionally. Take off heat and set aside. Sauce will be very thick.

Roll dough into 13-inch circle on well-floured surface. Transfer to baking sheet and spread peanut sauce evenly over dough. Top with Monterey jack, carrot, red pepper and red onion.

Bake for 12 minutes or until crust is golden brown and cheese is melted. Sprinkle with cilantro and peanuts. Serve with lime wedges if desired.
