Bring large pot of water to boil. Add1 teaspoon salt and kale. Boil 3 minutes, or until kale is tender. Drain in colander and rinse quickly with cold water until cool. With your hands, squeeze the kale to expel moisture. Blot with towel, if necessary.

Place kale, garlic, walnuts, pepper flakes and 3/4 cup lemon-infused olive oil in bowl of blender or food processor. Blend until almost smooth, scraping bowl frequently. If too thick, add more olive oil. Place asiago in bowl; add kale mixture and blend. Serve with pasta, top crostini or bruschetta with the pesto or add it to sandwiches or cooked vegetables. Can be stored, refrigerated, several days or frozen.


*Or, add 2 teaspoons fresh lemon juice to 1 cup olive oil.


**Parmesan may be substituted.
