Mini Meat Loaves with Asiago Cheese

A cube of Wisconsin asiago cheese is stuffed into each mini meat loaf. They're pizza flavored and so kid-friendly with a fun surprise hidden on the inside.

Heat oven to 425°F.

Combine the onion, garlic, tomato sauce, basil and oregano in a large bowl. Season with salt and pepper to taste. Crumble beef over tomato sauce mixture; mix well. Divide beef mixture into twelve 2-inch balls.

Shred 1 cup asiago; set aside. Cut the remaining asiago into 12 cubes, approximately 1/2-inch squares. Shape each meatball around a cheese cube. Place in a greased muffin pan. Bake for 25-30 minutes or until a thermometer reads 160°F. Sprinkle with the reserved shredded asiago during the last 3 minutes of cooking. Let stand 5 minutes before serving.
