Brush butter over 1 side of each bread slice. Turn slices over. Spread 1 slice thickly with mascarpone. Top with prosciutto, brie and spinach in that order. Season with salt and pepper. Spread fig preserves over other slice. Place over spinach, preserve-side-down; press firmly. Heat griddle or nonstick skillet over medium-low heat. Toast sandwich until cheese is melted and bread is toasted, turning once.
