Whisk all dressing ingredients until well blended. Set aside.

Prepare grill for direct heat. Grill pitas on both sides. Cool slightly and cut or tear into pieces.

In large bowl, combine spinach, cucumber, tomatoes, green onions, radishes, red onion and mint leaves. Toss with dressing and season with salt and pepper. Top with pita pieces, feta, eggs and chicken, if using. Serve with lemon slices or wedges, if desired.
