In medium bowl, combine ground beef with 1 tablespoon chipotle chilies; mix well and form into an oval patty about the size of bolillo roll.

Grill or broil patty about 4 minutes per side for medium doneness or until internal temperature reaches 155°F (temperature will continue to rise to 160°F). During final 1-2 minutes cooking time, place pepper jack slices slightly overlapping on patty and grill or broil just until cheese starts to melt.

Place patty on bottom of roll and top with remaining 1 tablespoon chipotle chilies mixed with 1 tablespoon reserve sauce. Top with avocado and cilantro and close with remaining roll top.
