Ravioli with Gorgonzola Anchovy Tomato Sauce

Cook ravioli according to package directions. Meanwhile, in a skillet, heat olive oil over medium high heat; add shrimp, garlic, lemon juice and pepper. Sauté until shrimp turns pink, 5 to 7 minutes. Remove shrimp; set aside.

In same skillet, combine tomatoes, anchovies, garlic, and lemon juice. Cook over medium high heat, 8 to 10 minutes, stirring occasionally. Stir in gorgonzola; continue cooking until cheese is melted, 2 to 3 minutes. Remove from heat; stir in parsley, pepper, and rosemary.

To serve, spoon sauce onto individual plates. Place 5 ravioli on each plate; top with 3 to 5 shrimp. Garnish with shavings of parmesan, and additional crumbled gorgonzola if desired.
