Pork Tenderloin with Blue Cheese Mushroom Sauce

Grilled pork tenderloin gets all dressed up with shallots in a buttery-blue cheese mushroom sauce.

Rub pork tenderloin with rosemary, salt and pepper to taste. Grease grill grate. Grill, covered, over medium heat for 20-25 minutes or until a thermometer reads 145°F, turning occasionally.

Meanwhile, sauté mushrooms and shallots in 2 tablespoons butter until tender. Whisk in remaining butter, 1 cup blue cheese and cayenne until smooth and slightly thickened.

Remove pork tenderloin from the grill. Cover and let stand for 5 minutes before slicing. Serve pork with mushroom sauce; sprinkle with remaining blue cheese.


Recipe Tip: The pork tenderloin can also be roasted. Heat oven to 425°F. Place tenderloin in a greased 9 x 13-inch baking dish. Bake for 22-27 minutes or until a thermometer reads 145°F. Remove from oven. Cover and let stand 5 minutes before slicing
