Place potatoes in large saucepan and cover with water; bring to boil over medium heat, then reduce heat and simmer until tender, 10 to 15 minutes.

Drain potatoes and add butter, asiago and cream. Mash until desired consistency, adding more cream if necessary. Stir in chives and season with salt and pepper.
