Melt butter in medium, heavy-bottomed saucepan over medium heat. Add brown sugar, cream and salt and whisk until well blended. Bring to very gentle boil, reduce heat slightly and simmer, whisking occasionally for about 5 minutes until sauce comes together.

Remove from heat and add vanilla and allspice. Stir and taste; adjust salt, vanilla and allspice to taste. Can be stored in airtight container in fridge for up to 2 weeks.

Serve on ice cream or pair with swiss, baby swiss or gouda.
