Sauté pineapple in olive oil in a large skillet over medium heat for 1-2 minutes or until just caramelized, flipping once. Remove pineapple from skillet with a slotted spoon. Sauté red pepper and onion in the same skillet over medium heat for 5-7 minutes or until tender. Remove from the heat. Season with salt and pepper to taste. Set aside.

Split Hawaiian rolls; butter the outside of each roll half with a 1/2 teaspoon butter. Warm a large skillet over low heat. Add two roll bottoms, butter side down, to pan; layer each with 1 pepper jack, ham and pineapple slice. Top each with about 1 tablespoon reserved pepper-onion mixture and another pepper jack slice. Cover and cook for 1-3 minutes or until bottom is golden brown. (Watch carefully.) Top with roll tops, butter side up. Flip sandwiches; cook, uncovered, 1-3 minutes longer, pressing gently with a spatula if necessary, or until bread is golden brown and cheese is melted. Repeat with remaining sandwiches. Serve immediately.


Recipe Tip:
Any brand of Wisconsin pepper jack cheese can be used.
