Grilled Pork Chops with Caramelized Onions and Swiss Cheese

Sweet caramelized onion mingles perfectly with the flavors of a creamy roasted red pepper sauce, Wisconsin swiss cheese and grilled pork chops in the special entrée.

Cooking Instructions

Sauté the onion in butter and olive oil in a skillet until tender. Reduce heat to medium-low; cook for 20-25 minutes or until golden brown, stirring occasionally. Season with salt and pepper to taste. Remove onion form pan; set aside.

Season chops with salt and pepper. Grill, covered, over medium heat for 4-6 minutes on each side or until a thermometer reads 145°F. Spoon reserved onion over chops; top each with 2 tablespoons swiss during the last 2 minutes of grilling. Remove chops from grill. Cover and let stand 5 minutes.

Meanwhile, place peppers, vinegar and garlic in a food processor. Cover and process until smooth. Pour into a lightly greased nonstick skillet. Bring just to a boil over medium heat. Reduce heat to low. Gradually whisk in cream; heat through. Gradually stir in remaining swiss until melted.

Serve sauce with chops.
