Grilled Pork Chops with Caramelized Onions and Swiss Cheese

Cooking Instructions

In medium skillet, melt butter and olive oil over medium-high heat. Add onions, 1/4 teaspoon salt, and cook, stirring frequently, until onions begin to soften, about 5 minutes. Reduce heat and continue to cook until onions are limp and golden brown, about 20 minutes, stirring frequently. Set aside.

Allow pork chops to stand at room temperature for 15 to 20 minutes before grilling. Prepare gas or charcoal grill for direct cooking over medium heat. Season chops with salt and pepper and grill with lid closed 12 to 15 minutes (145-150°F internal temperature), turning once. During last 2 minutes of grilling, divide onions over chops, and top with Swiss. Remove chops from grill and let stand 3 to 5 minutes.

Meanwhile, in food processor or blender, purée peppers, garlic, and vinegar. Pour into nonstick skillet and heat over medium heat, just to boil. Add cream and remaining cheese; stir and heat through.

To serve, pour about 1/3 cup sauce on each of 6 dinner plates. Top with chops.
