Whisk together sour cream and dressing; mix and refrigerate.

Brush mushrooms with olive oil. Grill, cap side down, for about 3 minutes or until tender. Flip and grill 1 minute longer. Cool.

Grill or fry brat patties about 8 to 10 minutes, turning once, or until internal temperature registers 165°F and no pink juices run when pierced with a fork. Place cheese slice on each patty until cheese starts to melt. Place a mushroom on each roll bottom. Cover with 1 1/2 tablespoons of sour cream mixture and place brats patty on top. Sprinkle with sprouts and cover with bun top.
