Steak Sandwich with Blue Cheese, Avocado and Red Onion

This baguette sandwich can be enjoyed with warm seared steak, or it can be wrapped and packed up for a picnic.

Cooking Instructions

Season steak with pepper and sea salt, and sear in cast iron skillet over very high heat. Cook each side 2-3 minutes or until deeply seared. Remove steak from pan and let rest 10 minutes. Slice in thin strips, about 1/4-inch-thick.

In small bowl, mix Wisconsin blue cheese and cream cheese until combined. Spread on both sides of baguette. Thinly slice red onion. Slice avocado. Place steak slices on 1 baguette half and top with slices of red onion, avocado slices and arugula leaves.

Finish sandwich with drizzle of olive oil and pinch of sea salt. Add layer of pickled peppers, if preferred.

Place remaining baguette half over to top.
