Harvest Farro Salad with Apples and Feta

Cooking Instructions

Prepare vinaigrette: in small bowl, whisk together lemon juice, mustard, garlic, honey and sea salt. Gradually whisk in olive oil. Mix in herbs.

In large bowl, toss farro and kale with half of prepared dressing. Spoon into serving dish, and layer apples, feta and olives over. Drizzle several tablespoons of remaining dressing over salad. Finish with parsley and green onions and ground black pepper to taste.
