In medium bowl, beat cream cheese with wooden spoon to soften. Stir in cheddar, green onions and, if desired, pepper flakes, mixing well. Stir in half of bacon, mixing well. Let remaining bacon stand at room temperature on sheet of waxed paper.

Cover and refrigerate cheese mixture 1 hour. Shape into ball and roll in remaining bacon. Serve with assorted crackers and thin slices of unpeeled red apples.
