Grilled Veggie Pita Press with Queso Fresco and Hummus

Split pita horizontally. Spread one pita half, cut side up, with 2 tablespoons hummus. Layer with vegetables, spinach and queso fresco. Spread remaining hummus over the cut side of remaining pita half; place on top. Butter the outside of sandwich. Cook in a panini griddle or indoor grill until bread is toasted and cheese is melted. 
 


Recipe Tips:
  • Any brand of Wisconsin queso fresco can be used. 
  • Mix it up! Try your favorite veggies grilled such as a mix of red bell pepper, zucchini, mushrooms, eggplant and onion in this sandwich.
