Thread shrimp onto skewers; sprinkle with 1/2 teaspoon pepper. Grill or broil just until shrimp are opaque in center.

Meanwhile, in large bowl, combine oil, vinegar, mustard, garlic, salt and remaining pepper; mix well. Add chickpeas, kale, tomato, red onion rings and olives; toss thoroughly. Add feta cheese and toss. Transfer to serving plates and top with shrimp.


*If kale is very tough, toss with olive oil in large bowl and knead about 3 minutes or until softened and slightly wilted.
