Cheddar, Apple and Walnut Upside-Down Cake

Heat oven to 350°F. Thinly slice 1 apple. Dice the other apple.

In 10-inch cast iron skillet, melt 3 tablespoons butter. Stir in 1/2 cup sugar. Cook over medium-high heat 3 to 4 minutes or until golden brown. Remove from heat. Arrange apple slices on top of caramelized sugar to cover entire skillet bottom. Set aside.

In large bowl, beat remaining butter (1 stick) and 1 cup sugar with electric mixer on medium speed until creamy. Beat in eggs. In medium bowl, mix flour, baking soda and cinnamon. Reduce mixer speed to low. Alternately add dry ingredients and buttermilk to butter-egg mixture, beating just until blended. Fold in diced apple, nuts and cheese. Carefully spoon over apple slices, spreading evenly. Bake 40 to 50 minutes or until firm when top is tapped. Remove from oven; let stand 10 minutes. Run knife around outside edge to loosen cake.

Place heat-proof 12-inch plate upside-down over skillet. Using hot pads or mitts, carefully turn skillet over to release cake and hold skillet in place a few moments. Remove skillet. Replace any apple slices that might have adhered to the skillet bottom. Serve warm or at room temperature.
