Heat oven to 400°F. Thaw puff pastry at room temperature for 30 minutes.

Combine sugar, flour and cinnamon in small bowl. Toss diced pears with lemon juice and zest in another bowl. Carefully unfold pastry onto a lightly-floured surface. Roll into 10x15-inch rectangle. Brush lightly with water.

Sprinkle sugar mixture over pears; toss to coat. Spoon filling on pastry to within 2 inches of edges. Roll up jelly-roll style, starting with the short side. Cut into 8 slices, about 1 1/2 inches each. Place cut side down 2 inches apart on a parchment-lined baking sheet.

Bake 20 minutes or until golden brown. Remove from oven and place a havarti slice (cut to fit) on each pastry. Return to oven just until cheese melts, about 1 minute. Remove pastries from baking sheet. Cool on wire rack.
