Heat oven to 350°F. Line 2 cookie sheets with parchment paper or silicone baking liner.

In bowl of electric mixer, cream butter and sugar until light and fluffy. Add egg yolk and vanilla, and mix to combine. Slowly add flour and salt, and mix until just incorporated. Add shredded cheddar and mix until just combined. Do not over mix.

Shape dough into 1-inch balls. If desired, roll in chopped walnuts. Place on cookie sheets 2 inches apart. Bake 5 minutes.

Remove from oven and cool slightly. Use thumb or back of spoon to make indentation in each cookie. Fill with jam. Return to oven and bake additional 8 minutes.
