In large bowl, toss quinoa, black beans, corn, cilantro, tomatoes, green onions and cotija until mixed. Set aside.

In small bowl, combine olive oil, cumin, maple syrup, garlic and lime juice. Whisk until smooth. Season with crushed red pepper and salt and pepper.

Pour vinaigrette over quinoa mixture, and toss until evenly coated. Garnish with additional cilantro, and serve with lime wedges, if desired.
