Queso Fresco Guacamole Bites

Everybody loves guacamole with tortilla chips, but serving the dip on flaky homemade pastry makes the occasion special.

Cooking Instructions

For crisps:

Heat oven to 400°F. Line large baking sheet with parchment paper.

In medium bowl, combine flour, salt and zest. Cut in butter using pastry blender or fork until mixture resembles coarse meal. Sprinkle cold water over dry mixture 1 tablespoon at a time, tossing lightly and stirring with fork. Add water each time to driest part of mixture. Dough should be just moist enough to hold together when kneaded gently.

Roll out dough to 1/8-inch thickness. Using 1 1/2-inch cookie cutter, cut in rounds. Place rounds on prepared baking sheet and bake for 10 minutes or just until turning lightly golden.

Cool on wire rack.


For guacamole:

In small bowl, mash avocado, garlic and shallot together. Add lime juice, salt and pepper to taste. Add 1/2 cup queso fresco and mix well. Garnish by topping with additional crumbled queso fresco.
