Four-Cheese Fondue

In a large mixing bowl, combine the three grated cheeses, flour, mustard powder, and cayenne pepper, mixing well to coat the cheese with the flour.

For fondue: In fondue pot (or medium saucepan on stove over medium heat), combine shallot, garlic, white wine and sherry over flame or burner until simmering and steaming. Once hot, add cheese mixture in thirds to fondue pot or saucepan, mixing well after each addition, stirring until smooth. Add blue cheese and stir well.

When ready to serve, add scallions and season with salt and pepper to taste. Serve with bread, fruits and/or vegetables as desired.
