Caramelized Onion Blue Cheese Gratin

Heat oven to 400°F. Coat 2-quart (8x12-inch) baking dish with 1 tablespoon of olive oil.

Heat remaining tablespoon of oil in small sauté pan over high heat until smoking hot. Add onion and cook until browned and caramelized, 5 to 10 minutes. Set aside to cool.

Slice potatoes as thinly as possible, with a mandolin if you have one. Do not put in water.

Arrange 1/4 of potatoes in layer in baking dish. Top with layer of 1/3 of the onions, 1/3 of the thyme, 1/3 cup cream, 1/4 cup blue cheese and 3 tablespoons blue cheese and parmesan. Cover with foil.

Bake 60 to 70 minutes or until potatoes are fork tender. During last 10 minutes of baking, remove foil to brown top. Let stand 10 minutes before cutting portions.
