Combine mascarpone, feta, pineapple, pineapple juice, salt, pepper and food coloring. Adjust seasonings, to taste. Transfer to a serving bowl, and top with coconut flakes.

For a smoother dip, blend ingredients in a blender or food processor until smooth.


Note:  Some suggested accompaniments to serve with this dip include Wisconsin colby jack and feta cheeses, almonds, black seedless grapes, candy corn, caramels, chocolate candies, orange soda, pretzels, salsa, tortilla chips.
