In a cast iron skillet or medium saucepan over medium-low heat, stir together rolled oats, water, milk and salt. When oatmeal thickens to desired consistency, turn off heat. Stir in pumpkin, 1/4 cup mascarpone, maple syrup and cinnamon. Taste and adjust as needed, adding more mascarpone for creaminess, maple syrup for sweetness and ground cinnamon for spice.

For serving, top each bowl with ground cinnamon, maple syrup, pomegranate and 1 tablespoon of the remaining mascarpone cheese. Eat immediately.
