Black Bean Sweet Potato Chili

In Dutch oven or large pot over medium heat, add olive oil. Add diced onion and cook 3-4 minutes, or until translucent. Add garlic and cook for 1 minute until fragrant. Add tomatoes, black beans, tomato paste, quinoa and chili seasoning. Reduce heat to low and simmer for 20 minutes (or until sweet potatoes are fork tender), stirring occasionally.*

Before serving, add lime juice and salt, adjusting seasonings to taste. Ladle chili into bowls and top with shredded colby and additional garnishes of choice.


*If you can’t find pre-mixed chili seasoning, mix chili powder, cumin and oregano together with quantities of each determined by personal taste!
 


Note: The longer the chili simmers, the more time the flavors have to meld, resulting in a tastier chili. Keep covered on low heat until ready to serve.
