Triple Bean, Balsamic and Italian Cheese Salad

In large bowl, whisk together oil, vinegar, salt and pepper flakes. Add beans, tomatoes, onions and 1 1/2 cups of the cheese. Mix well, cover and refrigerate at least 30 minutes. Stir in basil just before serving on lettuce leaves. Top with remaining cheese and chives.
 


Note: Salad serves 12 as a side dish and 6 as an entrée.
