Flatbread Egg Sandwich with Italian Cheese

Ingredients

Heat oven to 375oF.

Melt butter or heat oil in small skillet over medium heat. Add bell peppers and sauté until tender, 4-5 minutes. Add eggs and stir until they are soft set. Remove from heat and stir in 2 tablespoons of cheese and green onions. Top egg mixture with thyme. Spoon mixture over one side of toasted flatbread. Place on baking sheet, and top with marinara sauce and remaining 2 tablespoons cheese. Bake until heated through and cheese is melted, 5-6 minutes.

Remove from oven and garnish with oregeno, if desired. Fold plain side of flatbread over cheese mixture and serve.
