Egg, Bacon and Smoked Gouda Roll Ups

Heat oven to 425oF.

In large bowl, beat 7 eggs with salt and pepper. Melt butter in large deep nonstick skillet over medium heat. Add egg mixture and stir with wooden spoon until eggs are soft set. Remove from heat and stir in bacon and onions.

Beat remaining egg. Place pie dough squares on lightly floured work surface. Brush edges of squares with some of the egg. Place 2 tablespoons of cheese over each square and spoon about 1/2 cup of scrambled egg mixture over cheese. Place 1 tablespoon of cheese over egg mixture. Grab opposite corners of square and fold pastry over egg mixture so that corners are touching. Place turnovers on rimmed baking sheet coated with cooking spray or lined with parchment paper. Brush remaining beaten egg over tops. Bake 16-18 minutes or until golden brown.
