Chorizo, Egg and Pepper Jack Omelet "Muffins"

Heat oven to 350oF.

Crumble sausage into large skillet over medium-high heat. Stir in bell peppers and onions, and sauté until sausage is no longer pink and vegetables are softened, about 8 minutes. Transfer mixture to strainer. Drain off and discard drippings.  Cool at room temperature 10 minutes.

In large bowl, beat eggs. Add 1 cup of the cheese and mix well. Add sausage mixture and mix well. Generously butter muffin cups and pour 1/3 cup of mixture into each of 12 medium muffin cups. Or, pour 2/3 cup of mixture into each of 6 large muffin cups. Sprinkle remaining cheese over all. Bake 18-20 minutes or until set and centers are slightly puffed. Serve immediately garnished with parsley.
