Andouille Macaroni and Cheese

This easy mac and cheese starts out with a classic Wisconsin cheddar cheese sauce and spices things up with a topping of turkey andouille sausage.

Cook macaroni according to package directions; drain. Meanwhile, brown sausage in olive oil in a large skillet over medium heat, approximately 5 minutes. Remove from skillet; keep warm.

Melt butter in a Dutch oven over medium-low heat. Whisk in flour until smooth. Gradually whisk in milk and salt. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in cheddar until melted. Add macaroni; heat through, stirring constantly. Season with salt and pepper to taste.

Sprinkle each serving with sausage and additional cheddar.
