Baked Potato-Style Mac and Cheese

There are few things more indulgent than a fully-loaded baked potato or more comforting than a rich macaroni and cheese. This recipe brings those two delicious tastes together in one decadent dish with sour cream, Wisconsin cheddar and monterey jack and crunchy bacon pieces.

Cooking Instructions

Heat oven to 350°F.

Cook macaroni according to package directions until al dente; drain. Meanwhile, cook bacon in batches until crisp in a large skillet. Remove bacon to a paper towel to drain. When cool enough to handle, crumble bacon. Set aside.

Combine sour cream, milk, eggs, garlic salt, white pepper, onion powder and paprika in a large bowl. Fold in the macaroni, 1 cup cheddar and monterey jack. Transfer to a greased 13 x 9-inch baking dish. Sprinkle with the remaining cheddar.

Bake for 20-25 minutes or until the edges are golden brown and thermometer reads 160°F. Cover baking dish with aluminum foil if needed to prevent over browning. Let stand 10 minutes. Garnish with reserved bacon and chives.


Recipe Tip: If you don’t have chives on hand, swap in chopped green onions instead.
