Cajun Shrimp Mac and Cheese

Heat oven to 400°F.

Cook pasta according to package directions until al dente; drain. Meanwhile, melt 1 tablespoon of butter in a large skillet over medium heat. Add shrimp and 1/2 teaspoon of Cajun seasoning. Cook and stir until shrimp are pink. Spoon shrimp into a bowl. When cool enough to handle, cut shrimp into 1/2-inch pieces.

Melt 4 tablespoons butter in a Dutch oven over medium-low heat. Whisk in flour until lightly browned. Gradually whisk in milk and the remaining Cajun seasoning. Bring to a boil; cook and whisk for 2 minutes or until thickened. Reduce heat to low; gradually stir in 2 1/4 cups pepper jack and 1 1/2 cups cheddar until melted. Remove from heat. Stir in pasta and shrimp. Season with salt and pepper to taste.

Transfer to a greased a 13 x 9-inch baking dish. Melt remaining butter in a bowl. Stir in Panko bread crumbs. Sprinkle with remaining pepper jack, cheddar and bread crumb mixture. Bake 15-20 minutes or until lightly browned and bubbly. Let stand for 10 minutes before serving.


Recipe Tip: Speed up prep time in this recipe by using frozen 1 pound cooked medium shrimp, peeled and deveined. Thaw the shrimp, and prepare as recipe directs until they’re heated through.
